Tasting notes

The noble mold reduces the content of water in the grapes and it concentrates the sugars and the aromas, giving the Muffato San Lorenzo a harmonic and unmistakable taste. Tasting notes:  a light gold yellow colour with an aroma that recalls peaches and honey. A dessert wine, well structured and very harmonic.
Pairings: It goes well with well-aged and blue cheeses like Roquefort or Gorgonzola. It is the ideal wine pairing for foie gras.

Vinification:
The morning fog encourages the development of Botrytis Cinerea (noble mold) that reduces the water content in the grapes, causing a bigger concentration of sugar and aromas. After a soft pressing, the must ferments in French oak barrel and aged for 14 months.
